How to Make Bone Broth in an Instant Pot

This easy Instant Pot Bone Broth was one of the first things I made when I got my Instant Pot. I use chicken stock or broth in so many recipes, and since I eat keto most of the time now I have started making homemade chicken bone broth.

Bone broth is rich in vitamin, nutrients, and collagen because it is cooked longer than the usual broth or stock allowing all of those essential nutrients to be pulled out of the bones and into the bone broth.

Time is the key but finding it isn’t always easy. That’s why I was so excited to give it a try in my Instant pot! With the Instant Pot I’m able to get that full, rich, homemade chicken bone broth in half the time!

What is the different between Broth, Bone Broth, and Stock?

Bone broth, like it’s name implies, is made with bones from chicken or beef, and small scraps of meat. Bone broth is very similar to stock, which is also made with bones, the difference is bone broth has a higher concentration essential nutrients because the longer cook time allows the bones and connective tissues to break down and release nutrients, minerals, and collagen into the broth.

Because of the extra collagen released into the bone broth is will often gel as it cools. This is a sign of a good bone broth! It will return to liquid form when heated.

Stock is similar to bone broth but it is cooked for a shorter amount of time so the bones down break down to the same degree. While it is made with the same ingredients as bone broth it has the same consistency as broth and fewer minerals and nutrients than bone broth.

Broth is made with the meat rather than the bones so you don’t get the release of minerals and nutrients from the bones. It has the weakest flavor of the three but it is also the quickest to make.

Can You Make Bone Broth in a Pressure Cooker?

Yes! A pressure cooker cooks all of your chicken parts, vegetables, and herbs together under high pressure so instead of simmering a big pot for hours you have delicious chicken bone broth in just a few hours.

What Parts of the Chicken Should I Use for my Bone Broth?

  • Bones – this includes scraps of meat on the bones.
  • Wings
  • Neck
  • Feet

You can use a whole chicken carcass; bones, connective tissue, and scraps of meat, or a combination of several chicken parts to make your bone broth. In the recipe below I used two chicken carcasses, and 3 chicken wings.

The wings, neck, and feet of the chicken have lots of connective tissue in them that breaks down as they cook and adds lots of collagen to the broth.

Chicken feet can be a little hard to find, and some people just can’t stomach them, but chicken wings and necks work just as well!

Can I Make Chicken Bone Broth with a Rotisserie Chicken?

Yes! I love picking up a rotisserie chicken for dinner during the week and then using the leftovers to make my broth. That’s what I did in my recipe below but feel free to use any of the parts above instead, or in conjunction with the rotisserie chicken if you prefer.

Do I Need to Roast the Bones?

If you are using a cooked chicken carcass, or cooked chicken pieces, you do not need to roast the bones ahead of time.

If you are using a raw chicken that you have broken down for the bones you should roast them before placing them in the Instant Pot. To do this lay the bones and chicken parts on a baking sheet and roast for 20 minutes in a 400 degrees F oven. Once they are done roasting you can add them, and all of the juices, to your Instant Pot.

How Long Do You Pressure Cook Bone Broth?

To pressure cook chicken bone broth set it to HIGH pressure for 2 hours then do a 30 minute natural release.

How to Make Bone Broth in an Instant Pot

  1. Place all ingredients in your Instant Pot and fill the pot with water until it reaches just below the max fill line.
  2. Lock the Instant Pot lid in place, turn the valve on top to SEALING and set your Instant Pot to HIGH pressure for 120 minutes (2 hours).
  3. When the timer goes off press CANCEL and then let it do a natural release for 30 minutes.
  4. After 30 minutes flip the valve to VENTING to let out any remaining steam and remove the lid.
  5. Pour the broth through a fine mesh strainer into a bowl (you can wait until the broth cools some if you like) to strain out the chicken bones, vegetables, and herbs.
  6. Add salt to taste.

TIP: You can easily remove the fat from the broth by letting it cool and then storing it in an airtight container in the refrigerator overnight. In the morning you when you take off the lid there will be a layer of congealed fat on top of the broth. Scoop it off and dispose of it and then portion and store the bone broth as you’d like.

How Long Can You Store Homemade Bone Broth?

You can store your chicken bone broth in a sealed container in the refrigerator for up to 4 days. You can store chicken bone broth in the freezer for up to 6 months.

How to Freeze Bone Broth

Place the broth in an airtight, freezer-safe container and let it cool completely before sealing it with the lid and placing in the freezer.

If possible separate the broth into 1 cup portions. This will make it easier to remove and defrost only as much broth as you need.

  • 2 stalks Celery, roughly chopped
  • 1 Carrot, roughly chopped
  • 1 large Onion, quartered
  • 2 Bay Leaves
  • 1 bunch Fresh thyme
  • 2 – 3 sprigs Fresh Rosemary
  • 2 teaspoons Salt, plus more to taste
  • ½ teaspoon Pepper
  • Water
  • Place all ingredients in your Instant Pot and fill the pot with water until it reaches just below the max fill line.
