Ham Egg and Cheese Breakfast Sliders

These delicious Ham Egg and Cheese Breakfast Sliders are one of my new favorite ways to feed breakfast to a crowd. Soft Hawaiian rolls, scrambled eggs, sliced ham, and lots of cheese are baked until everything is perfectly melted together.

They are simple hot breakfast sandwiched that are super easy to make and make a great addition to a holiday brunch or weekend tailgating.

Ham Egg and Cheese Sliders layers with scrambled eggs, sliced ham, and shredded cheddar cheese ready to go in the oven.

How to Make Breakfast Sliders:

  1. Preheat oven to 350°F
  2. In a large bowl whisk together the eggs. 
  3. Pour the eggs into a greased skillet and scrambled over medium high heat until fully cooked. Set aside.
  4. Cut slider rolls in half separating the top half from the bottom half and placing the bottom half of the slider buns in a greased casserole dish or on a baking sheet.
  5. Place a small amount of scrambled eggs on each of the bottom buns.
  6. Place a layer of sliced ham over the eggs on each slider bun.
  7. Top each slider with shredded cheddar cheese. 
  8. Place top buns on the cheese.
  9. In a small bowl mix together melted butter, Dijon mustard, dried minced onions, Worcestershire sauce, and poppy seeds.
  10. Spread butter mixture over the sliders.
  11. Cover the dish with foil and bake for 10 minutes, then remove the foil and continue baking for another 5-10 minutes or until cheese is melted.
  12. Serve warm.

Can You Make These Breakfast Sliders Ahead of Time?

I don’t suggest making and baking these sliders ahead of time but I’m all about prepping everything ahead so you have less work to do in the morning.

To prep these breakfast sliders you can:

  1. Scramble the eggs and place them in a sealed container in the refrigerator.
  2. Shred the cheese and store it in the refrigerator.
  3. Slice your ham, or buy already sliced ham and store in the refrigerator.

This way all you have to do is assemble your breakfast sliders in the morning and top them with the butter mixture before placing them in the oven to bake.

  • 1/2 cup Butter, melted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Poppy seeds
  • 2 teaspoons Dried minced onion
  • 2 teaspoons Worcestershire sauce
